免搓麵包
要麵包鬆軟，是否一定要費勁揉搓? 有位麵包師說不是，只需要給時間麵團發酵。 於是他發明了一套免搓麵包製法，編寫成書，仔細用圖畫示範。 上個周末，我決定試驗一下。
我用的材料是混有全麥麵粉和6種種籽的高筋麵粉400克，快速酵母3克，鹽8克，葡萄乾100克; 上述材料混合之後，注入清水300克，蜜糖約20克，拌勻。 然後什麼也不用做，蓋上保鮮紙，讓麵團在室溫發酵12至18小時。 我那個麵團用了約14小時已漲至雙倍體積。
下一步是將發起的麵團傾出在灑上厚厚一層麵粉的桌面上。 這個配方的麵團水分特多，所以極黏極軟，根本不能揉搓，盡量摺叠成圓形一團便是，然後放置於鋪上厚厚一層麥糠(wheat bran)或燕麥糠(oat bran)的籃子裡再次發酵，面上再灑上麥糠。 這次發酵只需1至2小時。 So far so good。
但烘焙方法則需要用厚身搪瓷大鐵鍋一個，要連蓋放進焗爐裡預熱至220°C。 麵團發好之後，小心翼翼，將極熱的厚鍋自焗爐拿出來，打開蓋，將麵團覆轉放入鍋裡，蓋上，放回焗爐，烘焙30分鐘之後，打開蓋再烘焙15分鐘。 此時，麵團已奇妙地漲起，包面裂開。 小心取出，攤涼，切厚片，果然鬆軟，甘香味厚，不用塗什麼牛油果醬。
我的結論是，這個免搓製法太麻煩了，太浪費材料和能源，而且太大灼傷的危險，加上空鍋不宜加熱。 弄一次夠了，下次還是照常搓麵較簡單。
