吃糖的國際標準 麥嘉慧

世界衛生組織(WHO)在今年三月起草了新的糖攝取量指引，建議一個正常身高體重指數(BMI)的成年人每日的糖攝取量不應多於25克（約6茶匙），相等於每日所需熱量的百分之五，這份量相比2002年的建議50克減少了一半。世衛說這新指引可避免肥胖和蛀牙等健康問題。

指引所講的糖包括：加工食物生產商添加在產品中的糖、廚師烹飪時和食客自己加入食物或飲品中的糖，例如蔗糖(sucrose)、高果糖漿(high fructose corn syrup)、蜂蜜和濃縮果汁，留意一下食物包裝所列明的成份，有時或會見到葡萄糖(glucose)和果糖（fructose）等等，這些糖從每日飲食中加起來其實很易超標！

大家在吃下加工食品時，也不知不覺地吃下許多「隱形的糖」，例如1湯匙番茄醬便含有約4克（約1茶匙）糖，一罐330毫升的普通汽水就有約35克糖，是新標準的1.4倍！即使是聲稱低糖的盒裝檸檬茶（250毫升）也有12.5克糖，飲一盒已經等於吃了半日的糖quota了。這些高糖份的加工食物和飲品含有高熱量，但往往缺乏其他營養，多吃除了會導致肥胖外，也讓人少吃了營養豐富的食物。

去年初有研究指果糖會刺激大腦控制食欲的部位，所以添加了高果糖漿或蜜糖的食物會令我們食慾增加而吃多了。如果大家要減少果糖（熱量）吸收，就要避開汽水和添加了糖的殼類早餐。細心看食物包裝上的成份和營養標籤，你便知道有多少糖隱藏在食物中。
