我的假期
聖誕日，事無可為，被迫放假，賦閒在家，於是動手製作極煩的的意大利聖誕甜麵包panettone。最緊要是耐性，製作此物要分階段。第一階段：用少許酸種發麵8小時；用水、冧酒、雲呢拿精、鮮橙皮末、檸檬皮末泡浸糖漬碎果皮及提子乾8小時。第二階段，將麵粉、微量麥芽粉（malt）、鹽、鮮蛋黃、酵母及發好的麵種混和。揉搓至光滑柔軟而有彈性。第三階段，將幼砂糖逐少滲入麵糰，揉搓至完全吸收；第四：逐小塊搓入冷牛油，每加一塊都須揉搓至完全吸收。第五：混入泡浸好的碎果皮等物，揉搓至分佈均勻。這個麵糰十分稀軟，不易控制，我老實不客氣用攪拌機代勞。
搓好之後，第六步是將麵糰放在大碗內發酵。過程極慢。聖誕日的室「溫」一點不溫，發足12 小時，等候期間，慢條斯理手創麵包模子。Panettone 形狀獨特，是有拱頂如教堂的高身圓筒形，一般蛋糕模子太淺，於是用雙重焗爐紙摺疊成圓筒形置於直徑7 吋的蛋糕模子內，為其加高。
下一個階段，麵糰發好，倒出稍壓平，再用手掌整成球體，放入手創模子內再發酵，這次放在較暖和的位置，5 小時已脹至模沿。此時在麵糰面掃上蛋液，用剪刀開十字紋。最後一步，先高後中溫烤焗約45 分鐘，期間小心看火力，麵包面很快焦黃，為免過焦，中途要蓋上錫紙帽子。
烤成，小心取出，散發典型的米蘭聖誕麵包香氣，甜中帶橙花的清新。製作純為自娛，不能逞一時口舌之快，須待涼透，用紙包裏好封密待「熟」。
