聖誕火腿
聖誕大餐，我總愛以傳統大盤為主菜，其他菜式或小點盡可花巧，隨心所欲。
已故名家Elizabeth David 有個簡易而美味的烤焗火腿方法，值得推介。首先訂購去骨連皮生火腿（gammon）一隻約5kg，足夠一隊人吃，若人數少，可買半隻，或一隻分二，一半急凍後用。美味的火腿不會浪費，又可冷吃，做火腿三文治，又可做火腿蛋早餐，切粒做芝士火腿焗通粉之類，比火雞易處理得多了。
焗火腿方法簡單，但每個步驟都要小心，燙傷了不是玩的。火腿冲洗抹乾，用大號厚身錫紙整個包密，最最重要的是摺口須在側邊，火腿半「腰」高，摺得密實，因為火腿在烤焗過程中會溢出汁液，錫紙包密要令汁液不流出。同時烤焗至半途中要整個包裹反轉，所以摺口要在半腰，包裹才足夠盛住汁液。
焗爐調校至低中溫（170℃），將包裹好的火腿放置於烤盤內的烤架上，整盤放入焗爐。5kg 的全腿要烤焗5 小時，2.5kg 半腿則烤焗2 小時30 分鐘。烤焗至中途，整盤取出，小心將整個火腿包裹反轉，放回烤架上繼續烤焗完。然後取出擱置約1 小時，至溫暖程度，打開包裹，傾出汁液，剝掉火腿皮，之後可隨意裝飾或完全以天然面貌上枱。
這個製法的好處是做好準備工夫之後，烤焗過程中幾乎完全不用理會，可以利用空檔做其他工作，或者看報紙（看劇集？）。配菜也尚傳統：蜜炙甘筍、煙肉末小椰菜，夠了。
