這個周末，打算好好做一個稱心的蘋果批。在遙遠的英格蘭，秋天是蘋果收成的季節，秋收冬藏，農家的倉庫，堆滿了蘋果，於是有多種方法處理這種不用一錢買的甜美食材。蘋果批遂成家常點心，做法繁多，只看主婦的巧手和家人的口味。所以說，「母愛與蘋果批」，意指尋常公認、沒有人不同意的好東西。

在香港，自製蘋果批絕不尋常，也相當昂貴，要挑適合的蘋果也不易。不同品種的蘋果品質不同，絕大多數的蘋果美麗、香甜，適合清吃，往往還要先削皮，為了便於推銷，出產的蘋果第一要符合消費者心目中的「蘋果美」，紅彤彤，形狀完美而光滑，而且遠途運來，要擺賣一段時間，皮必得堅硬，上蠟，不適宜吃進肚子裏。我童年，一個大蘋果捧在手裏，耐心用手帕擦亮，一口一口享受，已成過去。

做蘋果批， 不要挑愈煮愈韌的「eating apple」， 要可以煮成蘋果醬那種， 但通常推薦的「cookingapple」Bramley，超市並不常見，只能憑試驗找合適而不太昂貴的品種。

找到合適的蘋果， 其餘就十分簡單， 不外是做酥皮（shortcrustpastry），沒工夫做，就買現成急凍的全牛油酥皮；碾薄，鋪上深批碟，蘋果去皮切成大塊，跟少許糖少許檸檬汁撈一撈，放進去堆得高高的，蓋上批皮，
