蛋糕保鮮法
新書到手，是Nigel Slater的《Kitchen Diary》第二集，馬上試試新配方杏脯小蛋糕，特色是材料之中有剁碎的杏脯肉，以及面上灑上麥片加黃砂糖，入口香脆。原配方是做16隻小蛋糕，我改為了24隻，更加小巧。另外，我改用部分全麥麵粉，不只較健康，也更有味道和質感。
「改良」後，材料如下：牛油225克（攤軟）、細砂糖200克、雞蛋3隻、杏脯160克（剁碎）、糖漬碎雜果皮1湯匙、白麵粉150克加全麥麵粉75克再加發粉（baking soda）3茶匙拌和、麥皮3湯匙，黃砂糖2茶匙。圖片：Getty Images
製法如下：牛油、糖糖混合攪打至忌廉狀，攪打入雞蛋，然後拌入混合好的麵粉和發粉，再拌入杏脯和果皮，分別注到墊上紙杯的24個小杯蛋糕模，每杯灑上麥片和黃砂糖，放入調至180度的焗爐裡，烘焙約20至25分鐘即成。
注意，這個配方的小蛋糕會稍為下陷而不是高起。稍為攤涼，便要趁新鮮吃，兩三口已吃掉一個，一次吃兩個也不算多。
這種小蛋糕越新鮮吃越好，在密氣的塑膠盤或鐵罐裡可存放兩天，但過了兩天，要回復新鮮狀況也有方法，我用濕紙包裹著，在360℃的微波爐「叮」25秒最好，另一個方法是在座枱式的多士烘爐裡烘一分鐘，再待一分鐘後取出。
由此可見，保鮮不必用保鮮紙。我自己烘製的麵包，一般可以保持新鮮整個星期，這是因為製法用的是慢發酵過程。如果稍嫌乾，可以烘成多士，也同樣可口。
