通通識 – 煮食的中英文名稱
中菜跟西餐的基本煮食方法既有很多相同的地方，也有不少相異之處。我們且看煮食的中英文名詞。
煎、炸、炒，英文怎說呢？西方習慣，用平底鑊煎，一般稱為fry。I am good at frying fish，我是煎魚能手。在深鍋裏炸，也是稱fry，最著名的French fries，炸薯條，就是大鍋沸油炸的。英國人不叫French fries，叫chips。Maryland Fried chicken，美國南部的炸雞，稱為fried chicken。要分別清楚，炸就稱做deepfry。注意： Fry 也可作名詞， small fry 炸小魚， 意謂「小人物」，不是big fish。
西人對廣東人用鑊炒菜的方法十分欣賞，各式西化鑊大行其道，西廚為我們「炒」的手法起了個新名詞，叫stir fry：一邊兜亂，一邊炒，每一塊材料都接觸到熱烘烘的鑊，短暫接觸，又迅速兜起，的確是西方所無。Stir fried vegetable，最具東方特色。
用油為傳熱媒介有煎、炸、炒，用水為媒介，中菜則有蒸、煮╱煲、炆，西廚的相若就是steam、boil 或poach 和stew。Fishis best steamed，蒸魚原汁原味，最佳。西菜傳統，魚不是蒸的，而是用小量的水文火煮，這就是poach。Poach 不是只用清水， 很多時滲入白酒、香草、洋葱及西芹末， 代表作就是steamed mussels——steamed mussels 名不副實，因為不是隔水蒸的，而是放在香草白酒滲水中poach 成。Poach salmon，是經典名菜。
我們中菜有燉，是用小瓦缽封密了隔水蒸一段很長的時間，西菜不常見，倒是西式燉蛋，常在焗爐裏燉，用很精緻的有蓋小瓷盅，浸在半盤子熱水裏燉熱，又嫩又滑。
炆是先把材料炒透，加醬油及其他調味品及少許清水，再加蓋慢火炆稔。我最愛的是口蘑栗子炆雞。西菜相近的是stew，同樣手法，最大分別是西菜可在焗爐裏完成第二階段。名菜有紅酒炆雞、紅酒炆牛肉等。有些人覺得用上焗爐不如叫casserole，casserole 不過是指那個鍋子，還是叫stew 比較老實。
